The Museum Tower, 19th floor 4 Berkowitz St., Tel Aviv Tastes, shapes, colors, textures, word games, historic anecdotes – all these comprise the ample whole called "Japanese cuisine". Culturally embedded images such as the Mount Fuji, sakura flowers, and maple leaves are represented not only in Japan's art and literature, but also in its food. Rituals, folk beliefs, and ancient traditions supplement these images, turning a simple dinner table into a cultural scene. Anyone familiar with the sophisticated aesthetic of the Japanese food comes to realize the relevance of the saying that "the Japanese eat with their eyes". No less important is the fact that the Japanese people also often experience the world around them through food. Since the ancient times various local dishes attracted travelers and pilgrims; food design is reflective of annual seasonal changes; holidays and celebrations are characterized by special food items, each carrying a symbolic meaning. What is the story behind a bowl of noodles with fried tofu? Why a famous Kyoto sweet is called "eight bridges"? What is the connection between water spirit and sushi with cucumber? This lecture will answer these questions by focusing on food as an expression of Japanese culture. We shall discuss the connections between food, nature, and local and national identity, and reveal the world of images that enriches the world of food and gives it its unique character. About the lecturer: Dr. Helena Grinshpun is a Japanologist and a lecturer at the Dept. of East-Asian Studies of the Hebrew University of Jerusalem. Dr. Grinshpun's fields of research are contemporary Japanese culture and society, consumption culture, urbanism and family. Dr. Grinshpun also guides tours in Japan. |
:לאכול דרך העיניים, לראות דרך הפה תרבות יפן בראי האוכל שלה ביום שישי 19 באפריל, 2013 בשעה 11:00 בספריית שגרירות יפן מגדל המוזיאון רחוב ברקוביץ 4, קומה 19, תל אביב. טעמים, צורות, מרקמים, צבעים, משחקי מילים, אנקדוטות היסטוריות – כל אלו מרכיבים את המכלול העשיר אותו אנו מכנים "אוכל יפני". דימויים תרבותיים כגון גשר עץ בגן עתיק, הר פוג'י המושלג, פרח הדובדבן או עלה הסתיו זוכים לייצוג לא רק בספרות והאומנות היפנית אלא גם בתרבות האוכל שלה. וכאשר לדימויים הללו מתווספים טקסים, אמונות טפלות, סיפורי עם ומסורות עתיקות, שולחן האוכל הפשוט הופך לזירה תרבותית. כל מי שנחשף לאסטטיקה המתוחכמת של המטבח היפני נוכח בנכונות האמירה כי "היפנים אוכלים דרך העיניים". אך לא פחות חשוב מכך, היפנים גם מרבים לחוות את העולם מסביבם דרך הפה. מאז התקופות הקדומות מאכלים מקומיים היוו מוקדי משיכה של מטיילים ועולי רגל; מאכלים רבים מעוצבים כדי לשקף את עונות השנה; חגים ופסטיבלים גם הם מתאפיינים במאכלים מיוחדים, לכל אחד סמליות מורכבת משלו. אילו סיפורים מסתתרים מאחורי קערה עם מרק איטריות? מדוע לממתק אורז מפורסם קוראים "שמונה גשרים"? מה הקשר שבין שדון מים לסושי צמחוני? ההרצאה הנוכחית תעסוק באוכל כביטוי יומיומי של התרבות היפנית. נדון בקשרים שבין טבע, תרבות מקומית ולאומית והמטבח היפני על גווניו השונים והמשונים. נגלה את עולם הדימויים שמעשיר את עולם המזון ומעניק לו את הצביון הייחודי שלו. אודות המרצה: ד"ר הלנה גרינשפון היא חוקרת של יפן מרצה בחוג ללימודי מזרח-אסיה של האוניברסיטה העברית בירושלים. תחומי ההתמחות שלה הם תרבות וחברה עכשיוית, תרבות הצריכה, אורבנית ומשפחה יפנית. ד"ר גרינשפון גם מדריכה קבוצות ביפן. |
